The UI, while still having a lot more kana than your average game interface, liberally uses kanji for its descriptions. When Kris and Susie get transported to the other world, however, everyone speaks in kanji - Ralsei, Lancer, and, most notably, also Susie. Moving onto Deltarune, when Kris wakes up and goes to school, everyone's dialogue is, just like Undertale, all in kana - Toriel, Alphys, the classmates, Susie. Secondly, there is one very specific place in the original Undertale that is written in kanji. However, there are two considerations with this: firstly, that unlike in Shovel Knight, 8-4 did not give you the option to switch to kanji, which is significant because as I mentioned earlier kana can be quite mentally tiring to get through at times. (See how 8-4's translation of Shovel Knight does the same thing.) Another potential reason is that 3) it takes heavy influence from the MOTHER series, which also is written purely in kana (purportedly because Itoi found it easier to write that way). Undertale being kana-only can easily be chalked up to both reasons: 1) it does hold itself out as being technically kid-friendly (although it ultimately has a CERO B rating, meaning that everyone who's legally allowed to play it would probably be able to read kanji anyway), and more importantly 2) it relies heavily on a "retro" atmosphere with 8-bit sounds in its music and reliance on pixel art. There are two primary reasons a game might not have kanji: 1) if it's a kids' game (because many kids haven't learned all their kanji yet and therefore wouldn't be able to read it), or 2) if the game is an old game running on limited memory assets (therefore making it difficult to implement every single kanji character in the font). For an adult, text without kanji can actually be quite a nuisance to read, and before Black and White implemented the option to switch to kanji, a lot of adult players complained that Pokémon was somewhat difficult to read because it was forcibly in kana only. (This was something that the fan translation did not do, so it especially stands out.) For those unaware of how Japanese works, usually Japanese is written with a mixture of kanji (Chinese characters) and kana, and it's non-standard to completely eschew kanji in the first place. So one thing that stands out a lot about the original Undertale in Japanese is that it's written entirely in kana. That said, there is one thing I did notice that was particularly intriguing. I don't really feel that there's any need to go that much into the Japanese version of the game, given that it's largely fairly close to the English in the parts that matter and takes liberties when it needs to, as per a good translation (honestly, I'm very glad the IP is in the hands of 8-4 right now).
